Just released this week is the new commercially rated SousVide Supreme Chef. Commercail UL and NSF approved!

not sure what the difference is between this and the "regular" Sous Vide Supreme, but I know that once it get up near $700 I'd be looking at a Polyscience myself, that actually circulates.
Commercial has to do with several things, rated duty cycles, UL commercial rating, and NFS approval. Most State require these for items used in a commercial setting.
Not really dear i don't have any idea about it.
