I've just started my sous vide adventure. I spent some time yesterday and the day before testing my new Auber Instruments PID controller. However, yesterday I didn't reset the duration time when I put in the pot roast at 140F around 11 a.m. yesterday. When I got up at 6 am the "end program" lights showed and the machine was beeping. I don't know exactly when the machine ended the program, because I don't think I shut it off between the tests and starting the pot roast. Earlier I had been up at 2 am and it was not beeping. My best guess is that the machine shut off around 4:30 - 5:00 a.m.
The temperature was 116 F at 6 a.m. this morning.
Is the meat safe?
