Is there any difference in sous vide at altitude? I'm at 6300 feet. It doesn't seem that this should have an impact, but would like to have it confirmed before I purchase equipment.

I agree that there shouldn't be any difference what-so-ever. Most of the difference comes from the temperature that water boils but since this is below that, sous vide at high altitudes shouldn't matter at all.
