How to Sous Vide Pears

Sous vide pears are very good, and the process gives you a lot of control over their tenderness. For a slightly tenderized pear I'll often use 165°F (73.8°C) for 20 to 40 minutes. For a more tenderized and broken down pear, I've found sous viding them at 183°F to 185°F (83.9°C to 85°C) for 25 to 60 minutes works well. I usually cut them in half or cube them, then seal them in a single layer in the bags. Certain pears can be very tough, especially in the offseason, so they will need to be cooked on the longer side. Other pears, especially in season, can be very tender already and won't need a long cook time.

Sous vide pears are great, and you have a lot of control over their tenderness. For a slightly softened one I use 165°F (73.8°C) for 20 to 40 minutes and for a more tenderized one 25 to 60 minutes at 183°F(83.9°C).
