How to Sous Vide Corn

There is a wide range of sweetness and tenderness in corn, depending on the type and how in season it currently is. This can make it hard to find a good time range to sous vide corn. I usually cook it on the cob for 15 to 25 minutes at 183°F to 185°F (83.9°C to 85°C).

I usually cook it on the cob for 15 to 25 minutes at 183°F to 185°F (83.9°C to 85°C). If it is a "super sweet" or farm fresh corn, then it'll be on the shorter side. If it's a grocery store brand bought in the middle of winter then you may need to go even longer to break it down fully.
